CAFES AND SMALL BUSINESSES
Long gone are the days when cafés serve black coffee with a splash of milk, simple sandwiches and rolls and a vanilla slice. Nowadays, at the bare minimum, cafes menus need to list breakfast, brunch and lunch, and a plethora of warm and iced milk-based drinks and juices. Simple menus are now a more complicated multi-page affair. Lattes – of every flavour -, frappuccinos, iced mochas, hot chocolates, fresh-pressed juices, teas and sparkling beverages accompanied by a food menu of baked eggs, pulled pork sandwiches, noodle salads, crepe cakes, hot chips tossed in miso mayo, hotcakes, muesli - that's the modern cafe. The range of choices results in an increased volume of glasses, dishes, cutlery and dirty utensils. A small compromise for a bustling business.
It's not just the modern café either – small hospitality businesses are evolving. Bakeries and patisseries are required to expand their offerings to include more products, variety, and dine-in options. Bistros need to transform from a modest establishments to something more opulent. With this evolution in small dining establishments comes an evolution in wash requirements.
