Winchester has 6,700 students and the Winterhalter is in the kitchen of the Food Hall, the campus’s main food outlet, open from 8am to 2.30pm and 5pm to 7pm every day. However, it’s in the summer holiday that the warewasher really gets a hammering, when the language schools are in residence and up to 600 international students need to be fed three times a day.

Winchester University has installed a cutting edge warewash package that combines the latest Winterhalter conveyor rack technology with an energy-saving system that recycles heat from the site’s remote refrigeration plant and uses it to heat the water supply. The project, which was undertaken by Space Catering Equipment, has slashed running costs by providing what is effectively free hot water.

“The Winterhalter is ideal for the way we operate – we have peaks and troughs of activity. In incredibly busy periods it copes easily. When it’s quieter, features like the rack activation system cut energy consumption to a minimum.” says Winchester’s catering manager David Morton.

Rack activation means that the different zones of the machine (prewash, wash, rinse, dry) only operate when a rack reaches them. This helps minimise consumption of not only energy but water and chemicals, too.

“The university is committed to reducing its carbon footprint,” says David. “The Winterhalter’s energy saving features were a significant factor in the buying process.” These include a ‘fresh air’ drying zone. Unlike conventional systems using air from inside the machine, it draws in air from outside. Because this air has much lower humidity, it enhances drying and reduces energy consumption by at least 33%.

Another important aspect of the Winterhalter is its ease of use. “Alongside our regular KPs we employ students, so we have a real mix and could have 14 different people operating the machine in one week. The new warewasher is simple to operate – in fact, it’s fool proof and the results are consistently very good. Plus it has a selfcleaning program that makes day to day maintenance easy. It even thinks for itself, turning itself off when it’s not in use.”
