»The Edition Hotel« is something special.  As you’d expect from an Ian Schrager hotel, The Edition is one of London’s most chic venues.  In surroundings like this, the foodservice has a lot to live up to.  “We have to make sure that the menu matches the surroundings – we’re about both style and substance,” says executive chef Phil Carmichael.

The hotel’s strikingly designed Berners Tavern is a Jason Atherton restaurant serving a modern British brasserie menu. “We take the best ingredients and then do as little as possible to them!” says Phil. “When we opened a lot of critics said ‘great rooms, bet the food can’t match it’.  We’ve made it our mission to prove them wrong.”


Creating a menu to match the style of the hotel added pressure in the kitchen, so the equipment was designed to minimise stress – that’s why they chose Winterhalter warewashers.


“There’s no point in serving the very best food if the plates and glasses aren’t spotless. We’ve used Winterhalter before and we know it’s the market leader, it has a great track record with us for utterly reliable results,” says Phil. Describing the compact MT rack machine in the kitchen as his workhorse, Phil says, “We push it to the limit, using it 20 plus hours at a time.  It cleans all the dishes for breakfast, lunch, dinner, room service, staff dining, banquets and events…. even on a quiet day it’ll wash five or six thousand pieces, and they all come out spotlessly clean, ready to go.”

The Edition also has twelve UCM Energy glasswashers, connected to RoMatik reverse osmosis systems.  
“We take enormous pride in our stemware, there are six different wine glasses, all top of the range, and some are very delicate.  The Winterhalters cope brilliantly – we can set the controls to delicate wash and the glasses come out sparkling.”
