CONNECTED WASH
Greater safety, greater efficiency: the CTR can be networked with a computer or mobile device via CONNECTED WASH. This creates the basis for the analysis and evaluation of all the important operating data. To optimise the entire washing process.
Clearing and sorting stations
Would you like the processes in your kitchen to run perfectly? Do you want them to be tailored to the space you have at your disposal? The MTR programme of accessories includes various clearing and sorting stations for just this purpose. For an efficient and ergonomic approach to work.
Corner inlet
Whether large or small, square or angled: kitchens come in all shapes and sizes. The rack conveyor dishwashers in the MT Series can be flexibly adapted to suit your kitchen requirements. With the optional corner inlet, it is even possible to bring racks in at a corner, depending on the available space. This ensures optimal use of space and ergonomic workflows.
Drying zone
Would you like to be able to reuse the wash items cleaned by your CTR as quickly as possible? Then take advantage of the optional and retrofittable drying zone. This is especially recommended for wash items that are particularly difficult to dry. The CTR drying zone is available not only in a straight design, but also in a corner variant, so that your room planning can be as flexible as possible. For small kitchens and confined spaces.
Dual rinse
Optional dual rinse for perfect rinse results: alongside the standard fresh water rinse, the CTR has an additional pumped rinse with its own hygiene tank. This means: particles are rinsed off even more effectively and the rack capacity increases slightly.
Energy management
The CTR uses an integrated energy management system to ensure that in the case of restricted on-site fuse protection, the available energy can be used for the entire process with maximum flexibility. Its modulation takes place automatically and dynamically. This guarantees hygienic operation with the highest possible rack capacity at all times.
Exhaust air heat recovery
Intelligent use of energy: the CTR is optionally available with the Energy exhaust air heat recovery option. This uses the energy from the warm exhaust air to pre-heat cold inlet water. This is good for the environment, reduces energy consumption, lowers operating costs and also improves the kitchen climate.
External solid dosing
The external solid dosing unit SPX (Solid Pump External) is available as an option and, in combination with the external dosing control DCX, enables the use of detergent in powder form. They are highly concentrated and yield around two thirds more than a liquid detergent. Handling is convenient, ergonomic and safe, as the cleaning cartridges can be changed without coming into contact with the chemicals. Other advantages include an option for direct installation on the machine, compact storage of the replacement cartridges and the minimal waste volumes.
Filling and emptying
The CTR has several programmes for filling and emptying the wash tank. Quick start: The machine fills within as little as eight minutes (depending on on-site conditions) and is ready for use shortly after. Individual water change: Depending on how soiled the water is and the time available, a part or full regeneration of the tank water can be performed by means of the tank water exchange programme. Quick emptying: In addition to the regular drainage programme, there is also a programme that will pump out all the tank water in just five minutes.
Filtration system
The cleaner the wash water, the fewer changes of water are required – and the better the wash result. That’s why the CTR is equipped with Winterhalter’s proven and efficient quadruple filtration system: In Steps 1 and 2, coarse soiling is first collected by removable strainers in the main wash zone. In Step 3, the Mediamat then filters the finest particles, such as coffee grounds, from the wash water. And during Step 4, the pump inlet filter protects the wash pump from mechanical damage. If the CTR is fitted with a pre-wash zone, food residues are trapped in a separate and easy-to-clean filter system before the main wash zone.
Hygiene concept
Behind the CTR is a concept for perfect hygiene. The machine has deep-drawn tanks, 180° swivelling hygiene doors, a hygiene tank heater, hygiene design of the machine interior and an exhaust air heat recovery with an integrated and easy-to-clean grease filter. The hygiene logbook provides additional hygiene safety: it stores all important operating data and the current operational status including error messages and can also be called up via CONNECTED WASH*. The hygiene certificate in accordance with DIN SPEC 10534 confirms the high hygiene standards of the CTR.

Hygiene mode
Hygiene mode is one innovative feature of the CTR: if the tank or boiler temperature falls below the set value, the machine automatically reduces its transport speed and thus ensures a hygienic wash. The user can also change to “Speed mode” at any time. The CTR then maintains its constant transport speed and washes with the selected rack capacity.
Increased boiler heating
The boiler heat output is initially designed for the on-site conditions based on the inlet water temperature and rinse water volume. Should these change during the course of the machine lifecycle, the boiler heating can be increased retrospectively.
Inlet tables
Peak time. Continuous loads of dirty dishes keep coming into the kitchen. At times like this, accessory inlet tables facilitate an organised process for loading the racks and the machine. And ensure that work is carried out ergonomically.
Item-controlled zone activation
An economical feature of the CTR: the pre-wash, main wash and rinse zones are only activated by the machine control when they are actually needed – when the items being washed enter the respective zone. This conserves resources and lowers the operating costs when the machine is running below capacity. Because water, power, detergent and rinse aid are used efficiently and economically.
Machine housing
Quality makes the difference. The CTR is constructed with a double-skinned, insulated stainless steel housing, including an enclosed baseplate and machine rear wall. It thus fulfils the requirements of the IPX5 splash-proof class. Further advantages: significantly less energy losses, reduced noise emission and rodent protection.
Modular system
The CTR is based on a system of combinable modules: it is available with up to three tanks, with additional preheating and drying zones and with or without exhaust air heat recovery. The result is a large number of different machine variants. Which means: the CTR always offers you a customised solution. Precisely configured to your individual requirements. And should your requirements change in the future – no problem: the modular design means that modules and features can be retrofitted at any time.
Non-pressurised boiler
No matter how high the water pressure is in the building or how much it fluctuates: the fresh water rinse of the CTR operates independently of this and guarantees a consistently good rinse result.
Operating concept
The CTR makes washing remarkably simple: It is convenient to operate and easy to clean. A smart touch display is at work in the CTR cockpit. With single-button operation. With a language-neutral operator interface. And with self-explanatory pictograms. Different programmes can be selected for the tank draining process: each uses the standard drain pump, which protects the user from contact with wash water and thus ensures greater safety at work. All wash arms and curtains can be taken out separately and quickly and easily cleaned when necessary. The coding means they can’t get mixed up.
Outlet corner conveyor
With the optional outlet corner conveyor, clean wash items can exit the machine around a bend rather than in a straight line. At an angle of either 90° or 180°. This ensures optimal use of space and ergonomic workflows. If desired, the drying zone can be positioned on the outlet corner conveyor to save even more work space.
Outlet roller table
Additional space for freshly washed racks: the optional outlet roller table extends the outlet area where racks can be parked after the wash cycle. This is an easy way to increase the outlet rack capacity. It also allows wash items to dry off optimally.
Power optimisation connection
In a commercial kitchen, numerous electrical appliances are in use at the same time. The machines in the CTR Series are optionally available with a DIN 18875 interface, which allows them to be integrated conveniently into energy management systems. The energy requirements of individual devices are thus specifically controlled to avoid peak loads and high energy costs. The interface can also be retrofitted if desired.
Pre-wash zone M
For a better wash result and a significant increase in the rack capacity: the pre-wash zone M has its own deep-drawn tank, a double warewashing system at the top and bottom and its own pump. It has a width of 800 mm. The two-part filter system filters out food residues and prevents them entering into the main wash zone. A further advantage: by using the energy from the main wash zone, it pre-heats the wash items without any additional costs –stabilising the temperature level across the entire washing process. Its own door ensures easy operation and ergonomic cleaning. The pre-wash zone M can be retrofitted.
Pre-wash zone S
The pre-wash zone S is a space-saving addition to the main wash zone and increases the rack capacity of the CTR. It comes without a separate tank or its own wash pump and is 500 mm wide. Wash arms at the top and bottom remove coarse food residues prior to the main wash phase. Its inbuilt filter cassette traps coarse soiling and can be easily removed and cleaned. The pre-wash zone S can be retrofitted.
Rack capacity
High rack capacity with compact dimensions: this is what the CTR stands for. With a transport speed of up to 195 racks per hour, it can also handle a high volume of wash items during peak times. This allows you to simply and quickly adapt the machine performance to the current situation: by selecting one of the three speed levels: fast, standard and intensive. The saved values can be adjusted by the service technician according to individual requirements.
Reusable plastic cup washing system
A special cup rack and various inserts make it possible: up to 3,375 hygienically washed reusable plastic cups per hour. They can be dried quickly after the wash cycle and stacked to save space. The reusable plastic cup washing system provides certified hygiene safety in accordance with DIN SPEC 10534. It is available for all Winterhalter CTR Series compact rack conveyor dishwashers and can be retrofitted.
Service-friendly
Servicing has also been taken into consideration during the CTR design process: specific functions, such as e.g. the rinse water volume, can be changed by the service technician according to customer wishes. All components in the technical area of the machine are easily accessible. Any errors are shown on the display with self-explanatory pictograms, plain text and unambiguous error codes. This means errors can be quickly identified and resolved.
Smart touch display
Ready for the future: A smart touch display is at work in the CTR cockpit. With single-button operation. With a language-neutral operator interface. And with self-explanatory pictograms. The display reacts sensitively and can also be reliably operated in gloves. The surface is made of glass and is particularly robust. There are numerous functions for the user, chef and service technicians at three operating levels. The display is located at an ergonomic height at the inlet – for convenient operation.
Speed-dependent rinse water volume
For a significant reduction in water consumption and operating costs: the CTR adapts the rinse water volume automatically to the current transport speed. Based on need – from an economical 130 litres per hour up to a maximum of 260 litres per hour. Furthermore, an individual setting allows you to determine whether your washing operation is set for the lowest possible consumption of resources or a high rack capacity.
Rinse aid dosing adapts dynamically to the rinse water requirement.
Tank heating capacity
The CTR offers the highest hygiene safety: the heating output of a powerful 15 kW keeps the tank temperature stable and reliably ensures optimal washing and drying results. If required, a HighTemp function is available as standard to enable washing at higher tank temperatures.
Warewashing system
The CTR high-performance washing system comprises five wash arms at the top and four wash arms at the bottom. Thanks to their shape and jet geometry, they ensure that water is distributed over the entire area. The system has been balanced such that it provides the optimum pressure distribution between the top and bottom warewashing systems. This means that wash items are held securely in position to ensure maximum washing performance.
